Cakes and Brownies

Cakes and brownies come in a wide variety of styles and make excellent desserts. Personally, from experience I think brownies were created from failed attempts to make a cake. A brownie is nothing more than a fallen cake.

One thing to remember about most baking is that baking is more science than art. The chemical reaction that takes place when baking requires a recipe to be followed exactly to get the desired results. Unlike cooking where a little deviation and creativity can create a nice difference, trying that with baking anything that rises can be disastrous to say the least. I have learned that from my occasional disasters. Nothing worse than expecting a nice light cake and getting a fallen one and trying to pass it off as a brownie :-).
