Ice Cream Cakes

Ice cream cakes make a nice ending. Despite all of my experience making a large variety of cakes, etc. this is a definite item to be purchased. There are a variety of sources for ice cream cakes.

I am not sure of other areas of the world but here in the east coast of the United States most of our grocery stores carry them. There are also the ice cream chains such as Dairy Queen and Friendly's.

Here are some tips though to make serving this easier. Most cakes need to be thawed for at least a half hour before you serve them. Otherwise cutting them can be quite the hassle. If you heat the knife under hot water first it will definitely slice much easier. I will usually slice the cake completely before taking it in to serve it at the table.

Another big tip is to immediately get the leftovers back in the freezer before they thaw totally. Once that happens and they refreeze you have a crystal cake instead of an ice cream cake.
